Ingredients

  • ½ cup (115 g) butter, melted
  • 1 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • ⅓ cup unsweetened cocoa powder
  • 3⁄4  cup all-purpose flour
  • ½ teaspoon salt
  • ½ cup chocolate chips or 100–150 g dark chocolate, roughly chopped (or milk chocolate, whatever you prefer) – optional

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Grease or line an 8-inch (20 cm) square baking pan with baking paper.
  3. In a mixing bowl, whisk together the melted butter and sugar until smooth and glossy.
  4. Add the eggs one at a time, whisking well after each addition. Stir in the vanilla extract.
  5. Sift in the cocoa powder, flour, salt, and the chocolate chips or chopped chocolate. Fold everything together gently until just combined. Be careful not to overmix.
  6. Fold in the chopped chocolate, making sure it’s evenly distributed throughout the batter. For extra gooey brownies.
  7. Pour the batter into the prepared baking pan and spread it evenly.
  8. Bake for 20–25 minutes, or until the edges are set and a toothpick inserted into the center comes out with a few moist crumbs. The center should still look slightly soft.
  9. Sprinkle the remaining half of the chocolate over the brownies as soon as they come out of the oven.
  10. Allow the brownies to cool completely in the pan before slicing into squares.

Tips for the Best Fudgy Brownies

  • Don’t overbake them. Brownies continue cooking as they cool, and taking them out slightly early keeps the center wonderfully fudgy.
  • Chop your chocolate into both small and larger pieces for the best texture.
  • Add a handful of chopped walnuts, pecans, or hazelnuts if you’d like a little crunch.
  • Warm a brownie for a few seconds in the microwave before serving for extra gooey chocolate.
