Fudgy Brownies

There’s something incredibly comforting about a warm brownie fresh from the oven. The rich chocolate aroma fills the kitchen, the top develops that beautiful crackly crust, and the center stays wonderfully soft and fudgy. It’s the kind of dessert that’s perfect with a cup of tea, a scoop of vanilla ice cream, or simply enjoyed on its own while it’s still slightly warm.

Out of all the brownie recipes I’ve tried over the years, this has become my absolute favorite. It’s incredibly easy to make, uses simple pantry ingredients, and turns out beautifully every single time.

I actually make these brownies for my boyfriend quite often, and he absolutely loves them. Whenever I ask what he’d like me to bake, these are always at the top of his list. They disappear so quickly that I usually wish I’d made a second batch!

For the richest chocolate flavor, I love combining 100 g of dark chocolate (55–60%) with 50 g of milk chocolate. The dark chocolate gives the brownies a deep, rich cocoa flavor, while the milk chocolate melts into little pockets of sweetness throughout each bite. It’s the perfect balance and one I keep coming back to.

Ingredients

  • ½ cup (115 g) butter, melted
  • 1 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • ⅓ cup unsweetened cocoa powder
  • 3⁄4  cup all-purpose flour
  • ½ teaspoon salt
  • ½ cup chocolate chips or 100–150 g dark chocolate, roughly chopped (or milk chocolate, whatever you prefer) – optional

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Grease or line an 8-inch (20 cm) square baking pan with baking paper.
  3. In a mixing bowl, whisk together the melted butter and sugar until smooth and glossy.
  4. Add the eggs one at a time, whisking well after each addition. Stir in the vanilla extract.
  5. Sift in the cocoa powder, flour, salt, and the chocolate chips or chopped chocolate. Fold everything together gently until just combined. Be careful not to overmix.
  6. Fold in the chopped chocolate, making sure it’s evenly distributed throughout the batter. For extra gooey brownies.
  7. Pour the batter into the prepared baking pan and spread it evenly.
  8. Bake for 20–25 minutes, or until the edges are set and a toothpick inserted into the center comes out with a few moist crumbs. The center should still look slightly soft.
  9. Sprinkle the remaining half of the chocolate over the brownies as soon as they come out of the oven.
  10. Allow the brownies to cool completely in the pan before slicing into squares.

Tips for the Best Fudgy Brownies

  • Don’t overbake them. Brownies continue cooking as they cool, and taking them out slightly early keeps the center wonderfully fudgy.
  • Chop your chocolate into both small and larger pieces for the best texture.
  • Add a handful of chopped walnuts, pecans, or hazelnuts if you’d like a little crunch.
  • Warm a brownie for a few seconds in the microwave before serving for extra gooey chocolate.
  • Serve with vanilla ice cream, fresh berries, or a drizzle of warm chocolate sauce for an indulgent dessert.
